"Dad has always loved Cabernet Sauvignon so he was pretty stoked when I asked him for fruit. We used SA125 clone from our N block. This clone is low yielding and typically has ripe tannins. I love the lifted nose and bright, delicate flavours we get from our Cabernet. This variety is seriously underrated from the Southern Adelaide Hills."
We grow four different clones of Cabernet and SA125 (N Block) is my most preferred. In fact, this block is one of my favourites from the whole vineyard. It yields low, has tiny berries and produces wines with ripe tannins and intense aromatics. The final blend of this wine is about 60% whole bunch. Racked once for bottling with minimal SO2.
