“The crusher was broken the day we hand-picked so I convinced Dad to jump in the grape bins and crush the bunches by foot. We left them a while to extract flavour from the skins then basket pressed straight to barrel. The primary focus of this wine was texture but there is masses of citrus and spice.”
Made from our ‘M Block’ Madeira clone, this wine is essentially Semillon made as a Chardonnay. The hand-picked bunches were gently crushed by foot then basket pressed. The juice was fermented wild in used Hogs Head barrels and left for ten months on full lees to develop texture. Racked once for bottling. No adds except minimal SO2.
