Hand picked Cabernet Sauvignon, whole berry fermented then aged in used Hogs Head barrels for twelve months. This wine is highly perfumed with intense flavours of red currants, purple fruits and cracked pepper. This is pretty, new school Cabernet with mouth-watering tension and restrained use of oak.
This wine is vegan friendly and was bottled unfiltered with minimal additives.
Hand-picked Cabernet Sauvignon (picked early for freshness) was whole berry fermented wild for twenty five days on skins then basket pressed to used Burgundy Hogs Head barrels for twelve months maturation in oak. Racked once for bottling without fining or filtration.
