  • Made from our 'M Block' Madeira clone, this wine is essentially Semillon made as a Chardonnay. The hand-picked bunches were gently de-stemmed then basket pressed. The juice was fermented wild in used Hogs Head barrels and left for ten months on full lees to develop texture. Racked once for bottling. Minimal SO2 added. UNFINED & UNFILTERED. 650 bottles produced
  • This wine is 1/3 MV6 clone (100% whole bunch) and 2/3 Pommard clone (30% whole bunch). The berries and bunches were fermented wild, with daily plunging/ foot treading. Following fermentation, the fermented juice was slowly basket pressed to old Hogs Head barrels and left on lees for ten months. Racked once for bottling. Minimal SO2 added. UNFINED & UNFILTERED. 1000 bottles produced

  • "Dad has always loved Cabernet Sauvignon so he was pretty stoked when I asked him for fruit. We used SA125 clone from our N block. This clone is low yielding and typically has ripe tannins. I love the lifted nose and bright, delicate flavours we get from our Cabernet. This variety is seriously underrated from the Southern Adelaide Hills." We grow four different clones of Cabernet and SA125 (N Block) is my most preferred. In fact, this block is one of my favourites from the whole vineyard. It yields low, has tiny berries and produces wines with ripe tannins and intense aromatics. The final blend of this wine is about 60% whole bunch. Racked once for bottling with minimal SO2.
